Firstly, fueled by curiosity, we explore the impact of fermentation on coffee. One of our initial experiments involved inoculating coffee cherries with beer yeasts for six days. The result? An exceptional cup with a complex, low-acid profile that takes you on a special journey. Prepare for an intense experience with the enticing aroma of dark fruits. The first sip reveals a delightful sweetness, lightness, and a satisfying chocolate finish—a perfect everyday cup.
Secondly, we also delve into the dimension of time. In 2020, we launched our Barrel Aged coffee program. Throughout 2021, we aged green coffee beans with whiskey barrel staves, gradually releasing them after three months of aging. It was a joy to witness the coffee's transformation over time and discover the perfect balance. Beyond our curiosity, we experiment to support small producers. Coffee's value lies in the quality of the beans and the processes employed. A prime example is the sought-after Natural process, where the coffee bean ferments inside the cherry for 30 days, resulting in a sweet and complex profile. However, this process demands significant space and time, which are luxuries many small producers can't afford during the busy harvest season. Our goal is to collaborate with producers, helping them explore new processes that yield fascinating profiles and increased value without straining their limited resources. Through our Antigua Experiment with Luis Minas, he can now offer a coffee comparable to Natural process and receive greater rewards for his hard work.
